Chicken Tikka Masala with Brown Rice

Ingredients

  • 8 oz chicken breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, finely chopped
  • 1 tablespoon tikka masala paste
  • 1 cup canned chopped tomatoes
  • 1/2 cup coconut milk
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish
  • Cooked brown rice for serving

Preparation

  2. Add diced chicken breast to the skillet and cook until browned.
  3. Stir in tikka masala paste and cook for another minute.
  4. Add canned chopped tomatoes and coconut milk to the skillet. Stir to combine.
  5. Simmer for 15-20 minutes, until the sauce thickens and the chicken is cooked through.
  6. Serve the chicken tikka masala hot with cooked brown rice.
  7. Garnish with fresh cilantro before serving.
