Ingredients

  • 1 pound ground turkey
  • 2 cups mixed vegetables (such as bell peppers, zucchini, mushrooms, carrots)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Cooked quinoa or rice for serving

Preparation

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, and sauté until softened and fragrant.
  2. Add ground turkey to the skillet, breaking it apart with a spoon, and cook until browned and cooked through.
  3. Stir in mixed vegetables and Italian seasoning, and continue to cook for 5-7 minutes until the vegetables are tender.
  4. Season with salt and pepper to taste, and adjust the seasoning if needed.
  5. Remove from heat and garnish with fresh parsley. Serve hot over cooked quinoa or rice for a hearty and satisfying gluten-free dinner option!
