Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup cottage cheese
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • Pinch of cinnamon (optional)
  • Cooking spray or butter for greasing the pan

Preparation

  1. In a blender, combine rolled oats, cottage cheese, eggs, vanilla extract, baking powder, and cinnamon (if using). Blend until smooth.
  2. Heat a non-stick skillet or griddle over medium heat and grease with cooking spray or butter.
  3. Pour about 1/4 cup of batter onto the skillet for each pancake.
  4. Cook until bubbles form on the surface of the pancake, then flip and cook until golden brown on both sides.
  5. Serve hot with your favorite toppings such as fresh berries, sliced bananas, or a drizzle of honey for added flavor and nutrition.
