- 1 ripe avocado
- 2 eggs
- 1 tomato, diced

Preparation
- Cut the avocado in half and remove the pit. Scoop out some of the flesh to create a larger space for the egg.
- Crack an egg into each avocado half. Season with salt and pepper.
- Place the avocado halves on a baking sheet and bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until the egg is cooked to your desired level of doneness.
- Meanwhile, prepare the diced tomato and chopped spinach.
- Once the eggs are cooked, remove the avocado halves from the oven and top with diced tomato and spinach.
- Serve hot with optional hot sauce or salsa on the side.
