Ingredients

  • 1 ripe avocado
  • 2 eggs
  • 1 tomato, diced
  • 1/4 cup chopped spinach
  • Salt and pepper to taste
  • Optional: hot sauce or salsa for added flavor

Preparation

  1. Cut the avocado in half and remove the pit. Scoop out some of the flesh to create a larger space for the egg.
  2. Crack an egg into each avocado half. Season with salt and pepper.
  3. Place the avocado halves on a baking sheet and bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until the egg is cooked to your desired level of doneness.
  4. Meanwhile, prepare the diced tomato and chopped spinach.
  5. Once the eggs are cooked, remove the avocado halves from the oven and top with diced tomato and spinach.
  6. Serve hot with optional hot sauce or salsa on the side.
