Avocado and Bacon Omelette

Ingredients

  • 2 large eggs
  • 1 ripe avocado
  • 2 slices of bacon
  • 1 tablespoon of butter
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, chopped green onions

Preparation

  1. Cook bacon in a skillet until crispy. Remove and set aside.
  2. In the same skillet, melt butter over medium heat.
  3. In a bowl, whisk together eggs and season with salt and pepper.
  4. Pour the egg mixture into the skillet and cook until the edges start to set.
  5. Slice avocado and place it on one half of the omelette along with cooked bacon.
  6. Fold the other half of the omelette over the filling and cook until eggs are fully set.
  7. Serve hot, garnished with optional toppings if desired.
