- 1 ripe avocado
- 1 cup cooked chickpeas
- 1/2 red bell pepper, diced

Preparation
- Mash the avocado in a bowl and spread it evenly on toasted bread slices.
- In a separate pan, sauté onions, garlic, and bell pepper until softened.
- Add cooked chickpeas to the pan and mash slightly. Stir in nutritional yeast, salt, and pepper.
- Cook for another 3-5 minutes until flavors meld together.
- Serve the chickpea scramble over avocado toast, garnished with fresh herbs.
