Ingredients

  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 1 cup cooked chickpeas
  • 1/2 red bell pepper, diced
  • 1/2 onion, diced
  • 1 clove garlic, minced
  • 1 tablespoon nutritional yeast
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Preparation

  4. Cook for another 3-5 minutes until flavors meld together.
  5. Serve the chickpea scramble over avocado toast, garnished with fresh herbs.
