Preparation
- Preheat the oven to 375°F (190°C).
- Place the chicken breast on a baking sheet lined with parchment paper. Rub with olive oil and minced garlic. Season with salt and pepper.
- Bake the chicken breast in the preheated oven for 20-25 minutes or until cooked through and no longer pink in the center.
- While the chicken is baking, steam the broccoli florets until tender.
- Cook quinoa according to package instructions.
- Once everything is cooked, serve the baked chicken breast with steamed broccoli and quinoa on the side.
- Squeeze fresh lemon juice over the chicken before serving for extra flavor.
