Ingredients

  • 6 oz chicken breast, boneless and skinless
  • 1 cup broccoli florets
  • 1/2 cup cooked quinoa
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Lemon wedges for serving

Preparation

  3. Bake the chicken breast in the preheated oven for 20-25 minutes or until cooked through and no longer pink in the center.
  4. While the chicken is baking, steam the broccoli florets until tender.
  5. Cook quinoa according to package instructions.
  6. Once everything is cooked, serve the baked chicken breast with steamed broccoli and quinoa on the side.
  7. Squeeze fresh lemon juice over the chicken before serving for extra flavor.
