Jacket Potato with Tuna and Salad

Ingredients

  • 1 large baking potato
  • 1/2 cup canned tuna, drained
  • 1/4 cup sweetcorn
  • 1/4 cup diced cucumber
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Preparation

  3. In a bowl, mix together canned tuna, sweetcorn, diced cucumber, cherry tomatoes, Greek yogurt, lemon juice, salt, and pepper.
  4. Cut open the baked potato and fluff the insides with a fork. Top with the tuna mixture.
  5. Serve with a side salad of mixed greens, if desired.
