Paneer Tikka with Quinoa Pulao

Ingredients

  • 8 oz paneer, cubed
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1/2 cup plain yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon tikka masala spice blend
  • 1 tablespoon lemon juice
  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 teaspoon cumin seeds
  • 1 cinnamon stick
  • 4 cloves
  • Salt to taste
  • Fresh cilantro for garnish

Preparation

  1. In a bowl, mix together plain yogurt, ginger-garlic paste, tikka masala spice blend, and lemon juice. Add cubed paneer, diced bell pepper, and diced onion. Marinate for at least 30 minutes.
  2. Thread the marinated paneer, bell pepper, and onion onto skewers. Grill or bake until paneer is golden brown and vegetables are tender.
  3. In a saucepan, heat a little oil and add cumin seeds, cinnamon stick, and cloves. Sauté until fragrant.
  4. Add rinsed quinoa to the saucepan and toast for a few minutes.
  5. Pour in water or vegetable broth and season with salt. Bring to a boil, then reduce heat, cover, and simmer until quinoa is cooked and liquid is absorbed.
  6. Serve the paneer tikka with quinoa pulao, garnished with fresh cilantro.
