- 8 oz paneer, cubed
- 1 bell pepper, diced
- 1 onion, diced
- 1/2 cup plain yogurt
- 1 tablespoon ginger-garlic paste
- 1 tablespoon tikka masala spice blend
- 1 tablespoon lemon juice
- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 teaspoon cumin seeds
- 1 cinnamon stick
- 4 cloves
- Salt to taste
- Fresh cilantro for garnish

Preparation
- In a bowl, mix together plain yogurt, ginger-garlic paste, tikka masala spice blend, and lemon juice. Add cubed paneer, diced bell pepper, and diced onion. Marinate for at least 30 minutes.
- Thread the marinated paneer, bell pepper, and onion onto skewers. Grill or bake until paneer is golden brown and vegetables are tender.
- In a saucepan, heat a little oil and add cumin seeds, cinnamon stick, and cloves. Sauté until fragrant.
- Add rinsed quinoa to the saucepan and toast for a few minutes.
- Pour in water or vegetable broth and season with salt. Bring to a boil, then reduce heat, cover, and simmer until quinoa is cooked and liquid is absorbed.
- Serve the paneer tikka with quinoa pulao, garnished with fresh cilantro.
