Ingredients

  • 1 cup flattened rice (poha), rinsed and soaked for 10 minutes
  • 1 tablespoon cooking oil
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 1 green chili, finely chopped
  • 1/4 cup green peas
  • 1/4 cup diced carrots
  • 1/4 cup roasted peanuts
  • Salt to taste
  • Fresh cilantro for garnish
  • Lemon wedges for serving

Preparation

  1. Heat cooking oil in a skillet over medium heat.
  2. Add mustard seeds and cumin seeds. Let them splutter.
  3. Add finely chopped onions and green chilies. Sauté until onions turn translucent.
  4. Add diced carrots and green peas. Cook until vegetables are tender.
  5. Drain the soaked flattened rice and add it to the skillet. Mix well.
  6. Season with salt to taste.
  7. Cover and cook for 5-7 minutes until the flattened rice is heated through.
  8. Stir in roasted peanuts and garnish with fresh cilantro.
  9. Serve hot with lemon wedges on the side for a tangy twist. Enjoy this flavorful and easy-to-make breakfast dish that’s popular across India.
