Ingredients

  • 2 large eggs
  • 1 cup fresh spinach, chopped
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: diced tomatoes, sliced mushrooms, onions

Preparation

  1. In a small bowl, beat the eggs with salt and pepper until well combined.
  2. Heat olive oil in a non-stick skillet over medium heat. Add the chopped spinach and sauté for 2-3 minutes until wilted.
  3. Pour the beaten eggs into the skillet, swirling to evenly distribute.
  4. Sprinkle crumbled feta cheese over one half of the omelette.
  5. Once the edges begin to set, carefully fold the omelette in half with a spatula.
  6. Cook for another 1-2 minutes until the cheese melts and the eggs are cooked through.
  7. Slide the omelette onto a plate, garnish with optional toppings if desired, and serve hot.
