Ingredients

  • 2 eggs
  • 1/4 cup diced bell peppers (any color)
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped spinach
  • 1 tablespoon chopped fresh herbs (such as parsley or basil)
  • Salt and pepper to taste
  • Cooking spray or olive oil for the pan

Preparation

  1. In a bowl, whisk together eggs, diced bell peppers, diced tomatoes, chopped spinach, chopped fresh herbs, salt, and pepper.
  2. Heat a non-stick skillet over medium heat and lightly coat with cooking spray or olive oil.
  3. Pour the egg mixture into the skillet and spread it evenly.
  4. Cook for 2-3 minutes until the bottom is set.
  5. Carefully flip the omelette and cook for another 2-3 minutes until fully cooked through.
  6. Fold the omelette in half and transfer to a plate.
  7. Serve hot and garnish with additional fresh herbs if desired.
